Slow-Cooker Pulled Beef Sammies

This winning recipe combines two classic meals–pot roast and French Dip sandwiches–in the slow cooker.

boneless beef chuck roast (1 1/2 to 2 lb)
Salt and pepper to taste
medium onion, thinly sliced
package (1 oz) onion soup mix (from 2-oz box)
cups Progresso™ beef-flavored broth (from 32-oz carton)
tablespoon soy sauce
can (16.3 oz) Pillsbury™ Grands!™ Flaky Layers refrigerated original or buttermilk biscuits
  • 1 Place onion slices in 3- to 4-quart slow-cooker.
  • 2 Spray 10- to 12-inch skillet with cooking spray; heat over medium-high heat. Lightly sprinkle beef with salt and pepper on both sides; sear on each side 1 minute. Place beef over onion. Sprinkle soup mix over beef. Add broth and soy sauce to slow cooker.
  • 3 Cook on low heat setting 8 hours.
  • 4 When ready to serve, bake biscuits as directed on can. Meanwhile, remove beef from slow cooker to cutting board or large plate. Using 2 forks pull beef apart to shred.
  • 5 Cut each biscuit in half. Place beef and onion on bottom halves of biscuits. Serve sandwiches with cooking juices on the side for dipping.
