center-cut bone-in pork loin chops, 1 inch thick (about 2 lb), trimmed of fat

tablespoons cider vinegar

teaspoon ground ginger

teaspoon ground cinnamon

teaspoon ground red pepper (cayenne)

cup sweetened dried cranberries

medium baking apples, peeled, chopped (2 cups)

  • 1 Spray 3- to 4-quart slow cooker with cooking spray. Sprinkle pork with salt and pepper; place in cooker.
  • 2 In small bowl, mix brown sugar, vinegar, ginger, cinnamon, red pepper and cranberries. Spoon over pork in cooker; top with apples.
  • 3 Cover; cook on Low heat setting 4 hours to 4 hours 30 minutes.

I loved these! This is a great seasonal dish that we will be having in my home again. It's spicy and sweet and screams fall. This is not something that you will want once a week or even once a month but, when October rolls around this recipe will come out. I used boneless pork chops because they were on sale and the dish was delicious.

This meat was tender and delicious. I added extra cayenne for a little extra flavor. I should have listened to another review and added the apples later though. They were practically foam by the time everything was done.

My family loved this recipe. I used bone-in chops and seared the meat first before adding it to the pot. However, I would add a little more of the cider vinegar and add the apples 2 hours before the dish is done. My apples came out mushy. I also added a small box of golden raisins. I love the one pot idea. I will definitely make this again.

I thought this was a very good basic recipe. It was just a little too sweet for my liking. I will definitely make it again but with much less brown sugar.

Tried this and while the boneless center-cut chops I used were tender, it overall just wasn't flavorful enough--I would've liked it a bit sweeter with more ground ginger and cinnamon. I don't think the meat got the best benefit from the ingredients. I just felt like it needed something. I did include sliced up sweet potates with the apples and raisins, which worked great.
