Slow Cooker Orange Pork Tenderloin with Butternut Squash

pounds butternut squash, peeled and cut into 2-inch pieces (6 cups)
1/2
teaspoon salt

pork tenderloin (2 pounds)
1/4
cup orange marmalade
2
cloves garlic, finely chopped

  • 1 Arrange squash around edge in 3- to 4-quart slow cooker. Sprinkle with salt. Place pork in slow cooker (it will overlap squash slightly). Mix marmalade and garlic; spread evenly over pork.
  • 2 Cover and cook on low heat setting 7 to 8 hours.
  • 3 Remove pork from cooker; place on cutting board. Cut pork into slices; serve with squash.

Expert Tips

Try another flavor of marmalade, such as pineapple.

If you have time, brown the pork in oil on all sides before placing in the slow cooker. Browning adds color and a deeper flavor.

Watching your salt intake? Omit the salt, and season with pepper.

This is a great recipe to serve for entertaining. Fan pork slices in a circular pattern on a platter, and spoon squash in the center. Drizzle remaining juices over pork, and garnish with slices of fresh orange.

I tried this the other night and it was delicious! Next time, I will add more squash. That was as delicious as the pork! I would like to have had more for leftovers the next day with the leftover pork. I have just my husband and I to cook for now and after cooking for 6, this is a wonderful recipe for a 2 night dinner. Great!
