Slow-Cooker Curry Beef Stew

Serve this slow cooked beef stew with rice for dinner. Enjoy this delicious Indian curry made with Progresso® broth.

Ingredients

lb beef stew meat
1/4
teaspoon salt

tablespoons canola oil

cups finely chopped onions (2 large)

cloves garlic, finely chopped
1
jar (15 oz) mild curry sauce
1
cup Progresso™ beef-flavored broth (from 32-oz carton)
2
tablespoons fresh lime juice
1/2
cup chopped fresh cilantro
Hot cooked rice, if desired

Steps

  • 1 Spray 5- to 6-quart slow cooker with cooking spray. In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until browned. Place beef in slow cooker; sprinkle with salt. In skillet, heat oil over medium heat. Cook onions and garlic in oil 5 minutes, stirring occasionally, until tender. Spoon mixture over beef.
  • 2 In medium bowl, stir together curry sauce, broth and lime juice. Pour into slow cooker; stir to combine.
  • 3 Cover; cook on Low heat setting 8 hours. Serve stew over rice. Sprinkle with cilantro.
