Slow Cooker Cowboy Beef and BBQ Bean Sandwiches

medium onions, sliced
2-pound beef boneless arm roast, trimmed of fat

can (16 ounces) baked beans
1/4
cup barbecue sauce

teaspoon finely chopped jalapeño chili

onion kaiser rolls, split

cups prepared coleslaw

Directions

  • 1 Place onions in 3- to 4-quart slow cooker. Add beef. Top with baked beans and barbecue sauce.
  • 2 Cover and cook on low heat setting 8 to 10 hours.
  • 3 Remove beef from cooker; place on cutting board. Shred beef, using 2 forks. Return beef to cooker and mix well. Stir in chili. To serve, place 1/2 cup beef mixture in each roll and top with 2 tablespoons coleslaw.

Expert Tips

Use spicy barbecue sauce instead of regular barbecue sauce. Hamburger buns can be used in place of the kaiser rolls.

Stirring in the jalapeño chili at the end gives the beef mixture a wonderful burst of flavor.

Serve with potato chips and vegetable sticks on the side.

It says one serving is one sandwich, so I'm guessing it's 12 servings.

I love this recipe! I added green peppers to it also and instead of bbq sauce I used a baked bean with the bbq sauce in it(there are a variety of flavors so the possibilities are endless!) Loved the coleslaw also but, yum.... some of us used cheese. Slider rolls where used also....I had a variety of rolls set out for everyone to choose. It was quick and easy just my style!

I was going to rate this recipe as only average but when I got here I looked at the recipe and realized I completely forgot to add the onions! Without, it was good but in need of another flavor. Coleslaw didn't really do it for me, but I could imagine a thin slice of sharp cheddar would be yummy. I would make this again because they were well-received at the football party I made these for.
