I made this as a side dish for Thanksgiving and everyone loved it. It was a nice way to dress up corn...a vegetable that, for my family, is a must have. This was a winner and has made the cut for future holiday dinners.

I made this for a birthday party cook-out. Everyone liked it alot. Changes made: I made it with green peppers because the red pepper I had on hand went bad, but I can imagine it would be even better with red pepper. I added more bacon, because, well, it's bacon! yum! And also, about mid way through slow cooking, I added 1.5 more cups of corn because I didn't think it would be enough for everyone. Still had plenty of sauce. It was good and I might make it again sometime in the future.
