Would not use bone-in chicken, again. When eating had to be really careful about the small bones. Since I like tomatoes I would use 2 cans instead of one. Everything tasted better the next day.

I made this today for dinner. Made just a few changes, but this is definitely a keeper! I used boneless, skinless chicken (3 lbs), doubled the Italian seasoning, added 1/2 tsp garlic salt, 1/4 tsp ground red pepper and about a cup of fresh mushrooms. I put foil on top of it because I was using a 7qt crock pot, then I wrapped some fresh corn in foil and placed it on top of that about an hour in. I cooked it on high for 3 hours total--really, really wonderful!

If you are using a 6-7 qt pot, put a layer of foil down on top of the mixture to hold the heat in. After a couple of hours, add some corn on the cob to the top of the foil--another couple of hours, you have dinner!

If substituting boneless, skinless chicken breasts, reduce cooking time to keep chicken from getting dried out.

I made this tonight and my husband raved about it. I substituted boneless, skinless chicken breasts (couldn't find the bone-in ones at the grocery store), and left out the olives. I reduced the cooking time a little bit -- about 3 hours on high. I did add a little Cavender's seasoning right before serving. Served it over pasta -- delicious!!!!

This is very good. I used mushrooms instead of green olives and garlic salt. Anyone know how this might hold up if I were to freeze in individual meals?

The chicken was very delicious. I never make a recipe without making a few changes. I added garlic, 1 tsp. cumin and 1 tsp. Italian seasoning. I also put in 2 bay leaves. Discard bay leaves after chicken is cooked. My husband loved it.
