Slow-Cooker Chicken in Red Wine (Cooking for Two)

Chicken, carrots and mushrooms simmer in a rich red wine sauce. Perfect for cold days!

boneless skinless chicken thighs

cup ready-to-eat baby-cut carrots

cup frozen pearl onions

teaspoon salt
Dash pepper

teaspoon dried thyme leaves

clove garlic, finely chopped

dried bay leaf

cup dry red wine
1/3
cup Progresso® chicken broth (from 32-oz carton)

cup fresh small whole mushrooms
1
tablespoon all-purpose flour
1
tablespoon cold water
1
tablespoon chopped fresh parsley
  • 1 Line microwavable plate with microwavable paper towel. Add bacon; cover with paper towel. Microwave on High 3 to 5 minutes or until crisp. Crumble bacon.
  • 2 Spray 1 1/2-quart slow cooker with cooking spray. Place chicken in cooker. Add carrots, onions, bacon, salt, pepper, thyme, garlic, bay leaf, wine and broth.
  • 3 Cover; cook on High 4 to 5 hours.
  • 4 Skim any fat from surface of chicken mixture. Stir in mushrooms. In small bowl, mix flour and water; stir into chicken mixture. Stir in parsley.
  • 5 Cover; cook about 30 minutes longer or until mixture is thickened. Remove bay leaf before serving.
