Ingredients

Soup

1: lb ground beef

1: large onion, chopped (1 cup)

1/2: cup chopped carrots

1: clove garlic, finely chopped

2: cups cubed peeled potatoes

1: can (18 oz) Progresso™ Recipe Starters™ creamy three cheese cooking sauce

2: cups Progresso® chicken broth (from 32-oz carton)

1 1/2: cups shredded Cheddar cheese (6 oz)

Toppings, if desired

: Additional shredded Cheddar cheese

: Chopped dill pickles

: Ketchup

: Mustard

Directions

1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. In 12-inch skillet, cook beef over medium heat 5 minutes, stirring occasionally. Add onion, carrots and garlic. Cook 3 to 5 minutes longer, stirring occasionally, until beef is thoroughly cooked; drain.
2 In slow cooker, stir together beef mixture, potatoes, cooking sauce and broth.
3 Cover; cook on Low heat setting 3 to 4 hours or until potatoes are tender. Stir in 1 1/2 cups cheese. Cover; cook 10 minutes longer or just until cheese is melted.
4 Top individual servings with additional cheese, pickles, ketchup and mustard.

For a deeper beef flavor, use beef broth instead of chicken broth.

Ground beef should always be cooked before adding to a slow cooker recipe. Cook it just before assembling.

I have had this in the crock pot for 3 1/2 hours now, and the potatoes are not even close to being tender. I even diced them small to hopefully avoid that problem. I had such high hopes for this. It's now past dinner time, and I now have nothing to fix the family for dinner, unless we want to wait several more hours. Disappointed.
