cups halved and thinly sliced sweet onions (about 1 1/2 onions)

teaspoons chopped fresh thyme leaves

lb beef stew meat

cup Progresso® beef flavored broth (from 32-oz carton)

package (.87 oz) onion gravy mix
2
cups 1-inch pieces diagonally cut carrots
1
cup 1-inch pieces diagonally cut parsnips
1/2
cup Green Giant® Valley Fresh Steamers™ frozen sweet peas

  • 1 Spray 4- to 5-quart slow cooker with cooking spray. In 10-inch skillet, melt butter over medium-low heat. Cook onions and sugar in butter 30 to 35 minutes, stirring frequently, until onions are deep golden brown and caramelized. Stir in thyme and stew meat; place in slow cooker.
  • 2 In medium bowl, mix broth and gravy mix; pour over meat mixture in slow cooker. Top with carrots and parsnips. Cover; cook on Low heat setting 8 to 9 hours or until beef and vegetables are tender.
  • 3 Stir in peas. Cover; cook 10 to 15 minutes longer or until hot.

Substitute mushroom beef gravy mix or brown beef gravy mix for the onion gravy mix, if desired.

Serve this saucy beef stew over mashed potatoes with plenty of crusty bread for mopping up the extra sauce.

To GooseCooks - in answer to your question, YOU are confused. It clearly states above the picture "Slow Cooker Caramelized Onion Beef Stew", and then it CLEARLY states below the picture "cook sweet onions to caramelized perfection, THEN slow cook with beef and vegetables for a satisfying stew." It's written right there..... I used to love this website - if a recipe caught my eye I would check how to make it first, then check out the reviews and get peoples opinions and tweaks they might make to it. Now all I ever see are just people who can't read saying dumb things. Some people complain abo

I agree with hotcookinmom. The directions are very clear and plain. I dont see where the confusion would come from. There are many recipes for slow cookers that require some kind of cooking on the stovetop. Many stews call for you to brown the meat first in a skillet, or onions for that matter for color or for vegetables that may not be soft enough by slow cooking alone.

first of all Goose Cooks break it down one sentence at a time: Spray 4- to 5-quart slow cooker with cooking spray. THEN In 10-inch skillet, melt butter over medium-low heat. add the onion and sugar into the skillet (follow the directions) after onions are camrlized stir in the thyme and stew meat brown it up a little too...add the onions, and meat to the crock pot.... Cook onions and sugar in butter 30 to 35 minutes, stirring frequently, until onions are deep golden brown and caramelized. Stir in thyme and stew meat; place in slow cooker.

WHY does it say that the Onions are carmelized IN the Slow Cooker? "Skillet"? What is the deal? Cook sweet onions to caramelized perfection in your slow cooker, then simmer with beef and vegetables for a satisfying stew. Are y'all confused? Or am I??????

I omitted the parsnips and peas, at my husband's request, and used fingerling potatoes that had been cubes instead. I also cooked the onion the night before to save time in the morning. Absolutely delicious!! I will definitely be making this again! I threw a roll of Pillsbury Grand biscuits in the oven just before serving and they completed the meal perfectly.
