And, I forgot to mention that instead of the bread cubes on top, we used canned french fried onions. Nice addition of flavor!

Thank you for the comments about it being too thick. So, I added about a cup and half of V8 juice and another half a can of chicken broth. Delicious!

To OneCoffeeMom's question. I have frozen potato soup in the past and found that it seems kind of grainy when thawed. It still tastes fine, just not real smooth texture. Go ahead. I am anxious to make this recipe.

This soup had good flavor but it was WAY too thick. It was almost just like eating glorified mashed potatoes and calling it a soup. The next time I make this I will be sure to add some milk to the broth when the potatoes and vegatables are cooking. I hope this will alter the consistancy.

Excellent soup - I put the soup through the blender to puree it and it becomes VERY thick. Adding additional milk/cream helps to smooth it out. We add shredded chicken to the bottom of the soup bowls before ladeling in the chowder and top with croutons and cheese. For some flavor, I add Frank's Hot Sauce and Mrs. Dash...gives it a little life. Very good soup and a nice winter 'stick-to-your-ribs' kind of easy meal!

This is delicious! For the person who said it was bland, you may need to add additional salt to the recipe, depending on your cheese. It certainly should not be bland with onion, celery, cheese and beer in the recipe!

would love to know if you can freeze some of these slow cooker dishes as a family of 2 adults and child I tend to make more and then we have left overs but need something that I could pull out and heat on those busy days when I don't have things going on. Add more flavor we added bacon into ours and then topped with green onions, grated cheese and bacon pieces it was very good. More people need to have a basic recipe and then mix it up to fit their tastes. Cooking is just one big experiment.

OMG! This was the worst thing that I have ever made! It was so bland. I would not recommend this to anyone. I followed the directions exactly and even used "good" 4 year aged Cheddar. Terrible. I would not recommend this to anyone.
