Slow Cooker Beef Stroganoff Stew (Cooking for Two)

cup chopped onion

teaspoon finely chopped garlic

lb boneless beef tip steak, cut into 1/2-inch pieces

can (18 oz) Progresso® Vegetable Classics creamy mushroom soup
1/4
cup water
1 1/4
cups uncooked wide egg noodles
1/2
cup sour cream
1
tablespoon chopped fresh parsley

  • 1 In 1 1/2-quart slow cooker, layer onion, garlic and beef. Pour soup and water over beef.
  • 2 Cover; cook on Low heat setting 4 to 5 hours.
  • 3 Stir noodles into mixture. Increase heat setting to High. Cover; cook 20 to 30 minutes or until noodles are tender. Stir in sour cream. Top individual servings with parsley.

To save precious minutes in the morning, use minced garlic from a jar. You could also cut up the beef the night before and refrigerate.

There's just one thing to say about this recipe - BLAND!!

I wasn't fond of this one. The best part was how tender the beef was, but otherwise I think my stove-top recipe for stroganoff is more flavorful and I'm going to stick to that.

Lisa...I would use the beef gravy and maybe a small can of drained sliced mushrooms...

I would like to try this recipe, but we are so not mushroom/mushroom soup fans. Is there a substitution for mushroom soup? Would a can of beef gravy and half and half work? or Would a can of beef gravy and alfredo sauce work better?
