Slow-Cooked White Chili with Chicken

lb. boneless skinless chicken thighs, cut into thin strips

cup dried great northern beans, rinsed, sorted

medium onion, chopped
1
garlic clove, minced
2
teaspoons dried oregano leaves
1/2
teaspoon salt
1
(10 3/4-oz.) can condensed cream of chicken soup
5
cups water
1
teaspoon cumin
1/4
teaspoon hot pepper sauce
1
(4.5-oz.) can Old El Paso® Chopped Green Chiles
Fresh sage, if desired

  • 1 In 3 1/2 or 4-quart slow cooker, combine chicken, beans, onion, garlic, oregano, salt, soup and water; mix well.
  • 2 Cover; cook on low setting for 8 to 10 hours or until beans are tender and chicken is no longer pink.
  • 3 Just before serving, stir in cumin, hot pepper sauce and chiles. Serve with additional hot sauce if desired. Garnish with sage.

Very Good! I used chicken breast instead of thighs and in place of the dried beans, I used what I had on hand which was dried black eyed peas. I also did not have a can of chilis, so I used some green bell peppers and one cayenne pepper. The chili still turned out great... right consistancy and great flavor!

I made some modifications to this recipe. I used chicken tenders instead of thighs, two cans of beans,less water (only 3 cups), no salt and only one teaspoon of oregano. This recipe is comparable to the white chili with chicken that I have eaten at Ruby Tuesdays ~ very good and I will definitely make it again as well as pass the recipe onto friends.

This is a great recipe. I add pepperjack cheese and sour cream as a garnish. It's wonderful!!
