Slow cook turkey and tender vegetables, coated in quick-to-fix gravy that gets a head start from canned soup and broth for a filling dinner.

Ingredients

small red potatoes (about 2 1/2 inches in diameter), unpeeled, quartered

cups sliced carrots
1 1/2
lb. turkey thighs, skinned
1/4
cup all purpose flour

tablespoons dry onion soup mix

cup chicken broth or water

(10 3/4-oz.) can condensed 97%-fat-free cream of mushroom soup with 1/3 less sodium

Steps

  • 1 Place potatoes and carrots in 3 1/2 or 4-quart slow cooker. Place turkey thighs over vegetables.
  • 2 In medium bowl, combine flour and remaining ingredients; blend well. Pour over turkey. Cover; cook on high setting for 30 minutes.
  • 3 Reduce setting to low; cook at least 7 hours or until turkey is fork tender, its juices run clear, and vegetables are tender.
