Slow-Cooked Cabbage Soup

Ingredients

lb. extra-lean ground beef

medium onion, chopped (1/2 cup)

cups tomato juice

cup water

(16-oz.) pkg. coleslaw blend

(15-oz.) can chunky salsa tomato sauce

(11-oz.) can vacuum-packed whole kernel corn, drained
1
teaspoon dried Italian seasoning

tablespoons light sour cream, if desired
  • 1 In large nonstick skillet, cook ground beef and onion over medium heat for 5 minutes or until beef is thoroughly cooked, stirring occasionally. Drain.
  • 2 Place beef mixture in 3 1/2- to 4-quart slow cooker. Add all remaining ingredients except sour cream; stir to combine.
  • 3 Cover; cook on low setting for at least 5 hours. Serve with sour cream if desired.
