Slow-Cooked Beef Stew

lb. medium new red potatoes, cut into eighths

medium carrots, sliced (2 cups)

onion, cut in half lengthwise, thinly sliced

lb. beef top round steak, trimmed, cut into 3/4-inch cubes

cup beef broth

tablespoons tomato paste
2
teaspoons paprika
1/4
teaspoon caraway seed
1
garlic clove, minced
2
tablespoons water
2
tablespoons cornstarch

Directions

  1. 1 In 3 1/2- to 4-quart slow cooker, layer potatoes, carrots, onion and beef cubes. In small bowl, combine broth, tomato paste, paprika, caraway seed and garlic; blend well. Add to slow cooker.
  2. 2 Cover; cook on low setting for at least 8 hours.
  3. 3 Before serving, in small bowl, combine water and cornstarch; blend until smooth. With slotted spoon, remove beef and vegetables from broth; cover to keep warm. Stir cornstarch mixture into broth mixture in slow cooker.
  4. 4 Increase heat to high setting; cover and cook an additional 5 to 10 minutes or until thickened. Serve broth mixture over beef and vegetables.
