Creamy vegetables and beef stew -made ahead in a slow cooker for dinner.

lb. medium new red potatoes, cut into eighths

medium carrots, sliced (2 cups)
1
onion, cut in half lengthwise, thinly sliced

lb. beef top round steak, trimmed, cut into 3/4-inch cubes

cup beef broth

tablespoons tomato paste
2
teaspoons paprika
1/4
teaspoon caraway seed
1
garlic clove, minced
2
tablespoons water
2
tablespoons cornstarch

Steps

  • 1 In 3 1/2- to 4-quart slow cooker, layer potatoes, carrots, onion and beef cubes. In small bowl, combine broth, tomato paste, paprika, caraway seed and garlic; blend well. Add to slow cooker.
  • 2 Cover; cook on low setting for at least 8 hours.
  • 3 Before serving, in small bowl, combine water and cornstarch; blend until smooth. With slotted spoon, remove beef and vegetables from broth; cover to keep warm. Stir cornstarch mixture into broth mixture in slow cooker.
  • 4 Increase heat to high setting; cover and cook an additional 5 to 10 minutes or until thickened. Serve broth mixture over beef and vegetables.
