INGREDIENTS

 sockeye or chum salmon fillet (8 oz), cut into 2 pieces
1
 teaspoon honey
1
 teaspoon ketchup

DIRECTIONS

1 Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray. Place salmon on foil. 2 In small bowl, stir together honey and ketchup. Spread mixture over salmon. 3 Bake 12 to 18 minutes or until thickest part of fish flakes easily with fork.
The honey-ketchup combination creates a sweet and zesty complement to the mild salmon flavor.
Double the recipe and use the leftover salmon to create a cold salad. Cube the salmon and toss it with cooked rotini pasta, blanched vegetables and your favorite dressing. Chill the salad, then serve it on lettuce leaves.
