Shrimp with Thai Noodles and Peanut Sauce

cup creamy peanut butter

cup purchased Italian salad dressing

tablespoon brown sugar

tablespoons soy sauce

teaspoon grated gingerroot

teaspoon crushed red pepper flakes

(7 to 8-oz.) pkg. Thai rice noodles or 8 oz. uncooked linguine

lb. shelled deveined cooked medium shrimp, tails removed
1
medium red bell pepper, cut into thin bite-sized strips
1/4
cup sliced green onions including tops
1
medium lime, cut into wedges

  • 1 In small saucepan, combine water, peanut butter, salad dressing, brown sugar, soy sauce, gingerroot and red pepper flakes. Cook over medium-low heat until smooth and warm, stirring frequently. Set aside.
  • 2 Cook rice noodles as directed on package, adding shrimp during last minute of cooking time. Drain well; return to saucepan.
  • 3 Add bell pepper, onions and peanut butter mixture to rice noodles and shrimp; toss gently to mix. Serve with lime wedges. If desired, garnish with additional green onion tops.

Let children help when cooking the rice noodles. They will be fascinated to see the noodles become transparent during cooking.

A stir-fried vegetable, such as spinach, broccoli or green beans, would be a nice side dish with this entree.

This is hands-down one of our all-time Thai recipes. We have made it and shared the recipe (by request after making) for so many friends and family. We always make with linguine...no big difference than the rice noodles. We also garnish with plenty of cilantro. YUMMY!!!

Great recipe...I wasn't able to find the thai rice noodles and am very curious to see what the difference is!
