Ingredients

cups uncooked farfalle (bow-tie) pasta (4 ounces)

head Boston lettuce

medium cucumber, cut lengthwise in half, then sliced crosswise

ounces cooked (peeled and deveined) large shrimp

avocado, sliced

Fresh Fruit Salsa

cup coarsely chopped pineapple
1/2
cup coarsely chopped strawberries

teaspoon grated orange peel

tablespoons orange juice

tablespoon olive or vegetable oil

teaspoon salt

teaspoon white pepper

kiwifruit, peeled and coarsely chopped

small jalapeño chile, chopped

Directions

  1. 1 Mix all ingredients for Fresh Fruit Salsa.
  2. 2 Cook and drain pasta as directed on package. Rinse with cold water; drain.
  3. 3 Divide lettuce leaves among serving plates. Arrange pasta, cucumber, shrimp and avocado on lettuce-lined plates. Serve with salsa.
