ABSOLUTELY DELICIOUS. I wanted more but we ran out. You will not be disappointed with this recipe, so make a double batch!!!

OH MY GOSH!!! These are SO good!!! Plus my young children even loved them. (I left out the jalapeno for their tastes) My husband thinks it would taste just as good with chicken in it. WILL DEFINITELY make again!%0d%0a%0d%0ajeanette

Easier to prepare than it looks, and you don't have to buy a lot of ingredients. Very tasty and filling too, I could only eat one enchilada not two as the serving suggests. My only complaint is that the sauce is far too sweet for my taste. Reducing the sugar to one teaspoon rather than a tablespoon would allow more of the cilantro, corn, and pepper's flavors to come out, rather than drowing them in sugar. The sugar should be an enhancement rather than the first thing you notice. Recommended.

Just finished fixing this dish. It was very good. My husband said it needed something so we put a little salt and pepper on top. That did the trick. I will definitely make this one again. Good luck in the Bake-Off.

Made this for dinner the other night. It seemed a little complicated, but actually was easy and fun to make. It was wonderful! I can tell it will be a long time favorite.

Pretty good and quite easy. Corn sauce sweetly compliments the delicate seafood. For a daughter that doesn't care for shrimp, I may try imitation crab flakes next time. I used red bell pepper instead of the chilis the recipe called for - i think the chilis would have added nice flavor and kick.

This dish is very light and tasty. The sweet corn sauce gives it a unique flavor. It is a nice change from enchiladas made with red chili sauce. The hashbrowns in the filling gives it a wonderful texture and compliments the shrimp and seasonings. I would serve this dish to any of my dinner guests. Not only is it delicious, it makes a beautiful presentation.
