Ingredients

cup uncooked regular long-grain white rice

cup oil

medium green bell pepper, cut into thin strips

medium onions, thinly sliced

cup chopped celery

garlic clove, minced

(14.5 or 16-oz.) can whole tomatoes, undrained, cut up

cup chili sauce

teaspoon lemon juice
1/4
to 1/2 teaspoon hot pepper sauce

cup slivered almonds
1/4
cup raisins
1/4
cup chopped fresh parsley
1/4
teaspoon salt
1/4
teaspoon pepper
1/4
teaspoon dried thyme leaves

teaspoon curry powder

bay leaf

lb. shelled deveined cooked medium shrimp

Directions

  1. 1 Cook rice in water as directed on package.
  2. 2 Meanwhile, heat oil in large skillet over medium-high heat until hot. Add bell pepper, onions, celery and garlic; cook and stir until crisp-tender.
  3. 3 Add all remaining ingredients except shrimp. Reduce heat to low; cover and simmer 40 to 50 minutes or until flavors are blended, stirring occasionally.
  4. 4 Add shrimp. Simmer an additional 10 minutes or until thoroughly heated. Remove bay leaf. Serve over rice.
