We catch fresh shrimp. Besides being very spoiled, I'm always looking for different ways to prepare them. These have become one of our favorites. And the wasabi-soy-mayo is amazing!

Don't leave out the jalapeno! If you seed it, it's not hot, and the cakes are much better with them. Also, I've done them with freshly grated ginger and powdered ginger, and fresh is definitely better.
