Shrimp and Orange Salad

Ingredients

1/2
lb. shelled deveined uncooked medium shrimp

cups purchased mixed salad greens
1
medium orange, peeled, separated into segments and cut into bite-sized pieces
2
tablespoons orange juice
2
teaspoons olive oil
2
teaspoons Dijon mustard
1/8
teaspoon freshly ground black pepper

Directions

  1. 1 In medium saucepan, bring 2 cups water to a boil. Add shrimp. Reduce heat to medium; cover and cook 3 to 5 minutes or until shrimp turn pink. Drain; rinse with cold water. Drain well; set aside.
  2. 2 Arrange salad greens on serving platter or 2 individual plates. Top with shrimp and orange pieces.
  3. 3 In small bowl or cup, combine orange juice, oil, mustard and pepper; blend well. Just before serving, pour dressing over salad.
