In medium saucepan, bring 2 cups water to a boil. Add shrimp. Reduce heat to medium; cover and cook 3 to 5 minutes or until shrimp turn pink. Drain; rinse with cold water. Drain well; set aside.
Arrange salad greens on serving platter or 2 individual plates. Top with shrimp and orange pieces.
In small bowl or cup, combine orange juice, oil, mustard and pepper; blend well. Just before serving, pour dressing over salad.
