Slow-Cooker Scalloped Potatoes and Ham

Ingredients

lb unpeeled medium-size red potatoes, cut into quarters (about 6 cups)
1/3
cup chopped green bell pepper (1 small)

cups cubed (1/2 inch) cooked ham

tablespoon dried minced onion

jar (16 oz) Alfredo pasta sauce
1/2
cup milk
1/4
teaspoon pepper
1/3
cup shredded Parmesan cheese (1 1/3 oz), if desired
Chopped fresh parsley, if desired

Directions

  1. 1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. Layer half each of the potatoes, bell pepper and ham in slow cooker. Sprinkle with half of the onion.
  2. 2 In medium bowl, mix pasta sauce, milk and pepper; spoon half of mixture over ham. Layer with remaining potatoes, bell pepper, ham, onion and sauce (do not stir).
  3. 3 Cover; cook on Low heat setting 6 to 8 hours.
  4. 4 About 5 minutes before serving, stir mixture gently; sprinkle Parmesan cheese over top. Cover; cook on Low heat setting until cheese is melted. Top each serving with parsley.
