medium bell peppers (any color), cut into thin bite-size strips (2 cups)

  • 1 In 10-inch skillet, heat oil over medium-high heat. Add chicken; sprinkle with salt and pepper. Add onion slices; cook 4 to 5 minutes, turning chicken once, until chicken is brown on all sides.
  • 2 Add beer; heat to boiling. Reduce heat to low; cover and simmer about 10 minutes or until chicken is fork-tender and juices run clear.
  • 3 Stir in bell peppers. Increase heat to medium; cook uncovered 5 minutes longer, stirring occasionally, until peppers are crisp-tender.

My husband and I loved this dish! It was really good using the beer. It caramelized the onion and made chicken so moist and juicy. I served it with roasted Yukon gold potatoes and it complemented the dish wonderfully!

I make a dish very similar to this but add a quartered fresh tomato or a handfull of cherry tomatoes and use white wine instead of beer. It is one of our favorite meals.
