cup baby-cut carrots

package (4.3 oz) long grain and wild rice mix with herbs

  • 1 Heat 10-inch nonstick skillet over medium heat. Cook chicken in skillet about 5 minutes, stirring occasionally, until no longer pink in center. Stir in remaining ingredients including seasonings from rice mix.
  • 2 Heat to boiling; reduce heat to low. Cover and simmer 15 minutes, stirring occasionally. Uncover and simmer about 3 minutes longer, stirring occasionally, until carrots are tender and liquid is absorbed.

This was very easy and delicious. I sliced some whole carrots instead of the baby carrots. I had to simmer a little longer than 15 minutes.

This is a great, simple dish. Clean up was also a breeze. My picky family enjoyed this so much we have it once a week.
