Sauteed Chicken and Mango Salsa

This has a bit of spicy flavoring, a bit of sweet, and tang. The chilled mango salsa served on the top adds a bit of cool to the warmth of the food.

Ingredients

boned and skinned thighs (or 4 boned and skinned breasts)

Tbsp Olive Oil
1
clove fresh garlic crushed
1/4
cup diced onion (or 1 tbsp dried minced onion)

cups Progresso chicken Broth
1-2
cups white wine (Sauvignon Blanc or a Pinot Grigio is best)
½ tsp fresh ground Nutmeg
½ tsp Allspice
1/4
tsp fresh ground Chipotle Chili powder
2
tbsp white Balsamic Vinegar to taste
Salt and White Pepper to taste

cup Mango Salsa

  • 1 Heat Olive oil in large saute pain, add chicken, garlic and onions. Cook chicken until browned.
  • 2 Add Broth, Wine and additional Seasonings to chicken and simmer until almost all the liquid is gone.
  • 3 Add Salsa and simmer for just a couple of minutes.
  • 4 Serve chicken with another Tbsp of the mango salsa and put sauce from pan on rice or noodles.
  • 5 Green Giant vegetables, salad, and the wine finish off the meal setting.
