I tried this tonight,but thinking it was going to be bland, I made a few adjustments. I added a pinch of cayenne pepper,some diced onion, and a dash of old bay seasoning, just to give it a little kick. I also used chicken stock instead of water. This turned out to be very good. I think next time I make this, I will try some diced chicken instead of the sausage. And for desert, I made Pillsbury Banana cheesecake cookie bars. ( Delicious). Goodluck everyone with this recipe.

I first found this recipe in a Taste of Homes cookbook, It is such an awesome recipe! I used smoked beef sausage though because that's what I like, but to each their own. This is one of my favorites! Good Luck on yours!

This is AWESOME! I substituted home-made stock for the water and omitted the (ew) cream corn. I'll make it again and again for sure, but I will cook the rice separately (according to the pkg. directions) because, even though I baked the casserole an EXTRA 20 minutes, the rice did not absorb all the liquid, and I had to strain it before serving it. Hubby LOVED the pork, which I believe added a lot to the flavor (as well as the home-made stock).

I was not expecting a lot out of this meal. It was so much more than I expected. I used turkey kielbasa as the sausage to make it was a light meal. Delicious.
