My family loves things spicy! We used hot sausage instead of mild. We also added part of a can of Rotel tomatoes to the eggs! It was a total success!!!!!!!!! WARNING... it will be hot!!!

I rolled out the individual biscuits to make them thinner, so they wouldn't be so doughy and then you can put more mixture into them. Also, be sure you spray flat part of the tin so the lip of the buscuit does not stick. I did not and had to pry them off the top of the muffin tin. Still loved them!!

I made these for Easter brunch - a huge hit with the men, not so much with the ladies. They are very heavy and filling. Make sure to use the small biscuits, not jumbo. The taste is great, I will definitely make them again.

I made a few minor changes to this. Used turkey breakfast sausage since my daughter doesn't eat pork. Also used frozen diced, instead of shredded, hash browns since that's what I had on hand. I don't have a large muffin tin so I used 6 oz ramekins. I also used 3 eggs. I was able to make 5 ramekins so they were fuller than if I'd used the muffin tins. I served this with fresh fruit salad for Easter brunch and it was a huge hit! Will for sure make again. And it does help to do some of the prep a head of time then just assemble them and bake before you are ready to eat.

I loved this recipe! I substituted turkey sausage and left out the butter, but it's a great recipe. I thought with a little before hand prep, it would be a great camping breakfast!

Changed recipe just a bit. Instead of the muffin tin I used mini bread loaf pans. I was able to use them like a bowl so I could fill them. I have 2 hungry men at home and they loved them. I made a variety of them. Some with egg, potatoe and sausage. Then some with just sausage and gray. Then some with Egg and potatoe. What a great brunch!

Haven't tried it yet but sounds awesome...my family has a noon seating for this coming Easter so these may be too filling for breakfast but great idea for another occasion! Crispy bacon would be another option to the sausage, too!
