Sausage and Vegetable Skillet

Turkey sausage and veggies come together in this hearty skillet recipe - dinner ready in 25 minutes.

Ingredients

ring (14 oz) fully cooked turkey Polska-kielbasa sausage, cut diagonally into 1/2-inch slices

cups chopped zucchini (about 2 small)

cups fresh whole kernel corn or frozen corn

cups grape tomatoes
1/4
cup water

teaspoon pepper
  • 1 Heat 12-inch nonstick skillet 2 minutes over medium-high heat. Coat skillet with cooking spray; add sausage. Cook 5 minutes, turning once, until browned. Remove sausage from skillet; keep warm.
  • 2 Remove skillet from heat; spray generously with cooking spray. Add zucchini and corn; cook 4 minutes, stirring frequently. Stir in tomatoes, water and pepper, scraping skillet to loosen brown particles. Cover; cook 4 minutes or just until tomatoes begin to burst.
  • 3 Return sausage to skillet; cook uncovered 2 minutes longer or until liquid is almost evaporated.
