Saucy Pepper Steak

Come home to this saucy beef round steak that’s made stress-free with veggies in a slow cooker for dinner.

Ingredients

lb. boneless beef round steak, trimmed of fat, cut into 6 serving pieces

medium onions, cut into 1/4-inch slices
1
garlic clove, minced
1/2
teaspoon grated gingerroot or 1/4 teaspoon ginger

cup beef broth
3
tablespoons soy sauce
1/4
cup cold water

tablespoons cornstarch

medium green bell peppers, cut into 3/4-inch strips

medium tomatoes, each cut into 8 wedges
  • 1 Spray 12-inch skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add beef; cook about 8 minutes or until browned, turning once.
  • 2 Layer beef, onions, garlic and gingerroot in 3 1/2- to 6-quart slow cooker. In small bowl, combine broth and soy sauce; mix well. Pour over beef.
  • 3 Cover; cook on low setting for 7 to 9 hours.
  • 4 About 15 minutes before serving, in small bowl, blend water and cornstarch until smooth. Gradually stir into beef mixture. Stir in bell peppers. Increase heat setting to high; cover and cook an additional 10 to 12 minutes or until slightly thickened. Add tomatoes; cover and cook an additional 3 minutes or just until tomatoes are thoroughly heated.
