FILLING

lb. bulk Italian sausage

cup chopped onion

(4-oz.) can mushroom pieces and stems, drained

cups finely chopped cooked turkey or chicken

egg yolks

(9-oz.) pkg. frozen spinach in a pouch, thawed, squeezed to drain*

oz. (1 cup) shredded mozzarella cheese
1/2
cup grated Parmesan cheese
1
(14-oz.) jar spaghetti sauce

WHITE SAUCE

tablespoons margarine or butter

tablespoons all-purpose flour
1 1/2
cups whipping cream
1/3
cup grated Parmesan cheese
Dash garlic powder
Dash nutmeg

  • 1 Cook manicotti to desired doneness as directed on package. Drain; place in cold water.
  • 2 Meanwhile, heat oven to 350°F. In large skillet, brown sausage, onion and mushrooms. Remove from skillet; drain on paper towels. In large bowl, combine sausage mixture, turkey, egg yolks, spinach, mozzarella and 1/2 cup Parmesan cheese; mix well.**
  • 3 Drain manicotti; fill each with sausage mixture. Pour 1/2 the spaghetti sauce into ungreased 13x9-inch (3-quart) baking dish. Place filled manicotti side by side over sauce in dish.
  • 4 Melt margarine in medium saucepan over medium heat. Stir in flour; cook until smooth and bubbly, stirring constantly. Gradually stir in whipping cream; cook until slightly thickened, stirring constantly. Stir in 1/3 cup Parmesan cheese, garlic powder and nutmeg; blend well. Pour white sauce over manicotti in baking dish. Pour remaining spaghetti sauce over top.
  • 5 Bake at 350°F. for 35 to 40 minutes or until bubbly.

*To quickly thaw spinach, cut small slit in center of pouch; microwave on HIGH for 2 to 3 minutes or until thawed. Remove spinach from pouch; squeeze dry with paper towels. **For a more evenly chopped filling, place cooked sausage, onion, mushrooms, turkey and spinach in food processor. Cover; process with on/off pulses until of desired consistency.

Prepare recipe as directed; do not bake. over with foil; freeze. When ready to use, do not thaw; bake, covered, at 350°F. for 1 hour 25 minutes. Uncover; bake an additional 15 minutes or until mixture is thoroughly heated.

This is one of our all time favorite holiday recipes. The flavors are wonderful! It takes a bit of time to make, but well worth the effort.
