thin slices (about 6 oz.) smoked turkey (from deli)

cup purchased hummus

thin cucumber slices (1/2 medium)

cup sliced ripe olives

(1-oz.) thin slices Swiss cheese

croissants, split

Directions

  1. 1 Place 4 squares of plastic wrap on counter. Fold 4 turkey slices in half; place 1 on each piece of plastic wrap. Spread each with about 1 tablespoon hummus. Top each with 3 slices cucumber.
  2. 2 Fold remaining 4 turkey slices in half; place over cucumbers. Spread each with about 1 tablespoon hummus. Top each with olive slices and 1 slice cheese. Wrap each stack tightly in plastic wrap. Refrigerate or place in insulated cooler.
  3. 3 To serve, unwrap stacks; place 1 stack in each croissant.
