roll (16.5 oz) Pillsbury® refrigerated chocolate chip cookies
1/3
cup unsweetened baking cocoa
1/4
cup whipping cream
1/2
teaspoon kosher (coarse) salt
1/2
cup miniature semisweet chocolate chips
30
round chewy caramels in milk chocolate (from 12-oz bag), unwrapped

Topping

  • 1 Let cookie dough stand at room temperature 10 minutes to soften. Heat oven to 350°F.
  • 2 In large bowl, mix cocoa, whipping cream and 1/2 teaspoon salt with wooden spoon until well blended. Crumble cookie dough into cocoa mixture; add chocolate chips, and stir until well blended. Place dough in freezer 15 minutes for easier handling.
  • 3 Using measuring tablespoon or small ice cream scoop, shape dough into 30 balls. Freeze 15 minutes. Place 1 caramel inside each dough ball, covering completely and reshaping ball around caramel. Dough will be sticky; wet hands slightly if helpful. Place balls 2 inches apart on ungreased cookie sheets.
  • 4 Bake 9 to 13 minutes or until edges of cookies are set. Cool on cookie sheets 2 minutes; remove to cooling racks. Cool completely, about 20 minutes.
  • 5 Meanwhile, in small microwave bowl, microwave 20 caramels and 2 tablespoons whipping cream uncovered on High 45 seconds to 1 minute 15 seconds, stirring every 15 seconds or until caramel is melted and mixture is smooth.
  • 6 Spoon or drizzle caramel over cookies. Just before serving, sprinkle with salt.

Don't give up there is a few tricks to these! (1) With the 30oz roll of cookie dough, double the ingredients and it will make 36 "just smaller than golf ball" sized balls to freeze. (2) When you take the dough balls out of the freezer use a knife to cut them in half, use one thumb on each half to imprint a spot for the carmel, makes it easier to wrap the carmel. (3) Use ungreased parchment paper on your cookie sheets (I use heavy / rimmed baking sheets), and I go the full 14" time to bake. (4) Let the cookies cool completely ON THE SHEETS once they come out of the oven... don't touch them (l

I also had trouble with these cookies. The dough was too sticky and hard to handle and the caramel melted out the sides of the cookies on many of them. I have a recipe that has a dough made from scratch with peanut butter cups inside, I think I'm going to try that dough and use the Rolos, because I really like the chocolate/caramel combination. I gave the recipe a "2" for flavor.

I have tried these cookies twice, and after the last time,I threw the recipe away. The dough was very sticky and hard to work with, and the caramel melted out of over half of the cookies. Enough said!

I thought I would give these a try since they looked sooooo good! While they do taste good all of the caramel came out of the cookies. All but 4 of the cookies completely fell apart. I didn't even bother making the topping.

Sorry, these cookies were a lot of work and the taste was not worth all the effort. They were just ok.
