Salsa Meat Loaf

Zesty salsa, a combination of tomatoes, roasted green chiles and onions, is just one of many culinary delights that come to us from Mexico. For a change of pace, top meat loaf slices with salsa, shredded lettuce and sour cream.

Ingredients

lb. lean ground beef or ground turkey

cup quick-cooking rolled oats

teaspoon dried basil leaves
1/2
teaspoon dried oregano leaves
1/4
teaspoon salt, if desired
1/8
teaspoon pepper
1/2
cup thick and chunky salsa
1
egg, slightly beaten
  • 1 Heat oven to 350°F. In large bowl, combine all ingredients; mix well. In ungreased 9-inch square pan, shape meat mixture into 7x3 1/2-inch loaf. Bake at 350°F. for 50 to 60 minutes or until meat is well browned and firm. Let stand 5 minutes before slicing. If desired, serve with any remaining salsa.
