Expert Tips

Pungent fresh ginger is a key ingredient in many Asian meals and can transform a bland dish into a character-filled one. For sauces, ginger is usually best grated, as most people will not relish biting into a spicy-hot chunk. Fresh ginger is knobby; pare off the thin brown skin with a sharp paring knife or peeler before grating.
