cups chopped skinned deli rotisserie chicken (from 3- to 3 1/2-lb chicken)

cup halved pitted Bing cherries
1/2
cup crumbled Gorgonzola cheese (2 oz)

cup chopped green onions (4 medium)

cup champagne dressing

Directions

  • 1 Place spinach on large platter.
  • 2 Arrange chicken, cherries, cheese and onions evenly over spinach.
  • 3 Drizzle with dressing. Serve immediately.

Expert Tips

Poppy seed dressing or Italian dressing can be substituted for the champagne dressing.

If fresh cherries are not in season, use 1 can (15 oz) pitted dark sweet Bing cherries in heavy syrup (drained), 1 cup frozen (thawed) pitted cherries, or 1/2 cup dried cherries.

I tried this recipe and used Girards Champagne Dressing...it was fantastic!

You can make Champagne Dressing (several recipes online) or buy it in the grocery store (Girards Champagne Dressing). Problem solved.

I've made this salad before and it's delicious, with lots of room for customization. I dressed it with a champagne vinaigrette (made with champagne vinegar). This is a really easy and nice summer salad.
