You can make Champagne Dressing (several recipes online) or buy it in the grocery store (Girards Champagne Dressing). Problem solved.

I've made this salad before and it's delicious, with lots of room for customization. I dressed it with a champagne vinaigrette (made with champagne vinegar). This is a really easy and nice summer salad.

I was looking for a salad recipe for tonight since we are over run with garden lettuces coming in! Thanks for this simple idea. My spinach isn't mature yet so I think I'll try this with some arugula!
