Roasted Salmon and Garlic Potatoes

Serve these succulent salmon with a potato mixture baked with flavors of garlic and chives - a flavorful dinner!

cups mashed potato flakes

egg, beaten

(1 1/2-lb.) salmon fillet, cut into 6 serving-sized pieces

  • 1 Heat oven to 425°F. Line 15x10x1-inch baking pan with foil. Spray foil with nonstick cooking spray.
  • 2 In medium saucepan, bring water, margarine, garlic powder, salt and pepper to a boil. Remove from heat; add milk. Stir in potato flakes, chives and egg until well blended.
  • 3 Place salmon pieces skin side down in sprayed foil-lined pan. Top each piece with about 1/2 cup potatoes. Sprinkle with paprika.
  • 4 Bake at 425°F. for 20 to 25 minutes or until fish flakes easily with fork.
