Ingredients

1/2 cups dry red wine or beef broth

cup ketchup
1/4
cup packed brown sugar

tablespoons soy sauce
5
sprigs fresh thyme

lb beef short ribs
1/4
teaspoon salt
1/4
teaspoon pepper
1
tablespoon canola oil
4
large carrots, cut diagonally into 1 1/2-inch slices
2
medium red onions, each cut into 6 wedges
Additional fresh thyme sprigs, if desired

Directions

  1. 1 Spray 5- to 6-quart slow cooker with cooking spray. In slow cooker, mix wine, ketchup, brown sugar and soy sauce. Add 5 thyme sprigs.
  2. 2 Sprinkle ribs with salt and pepper. In 12-inch skillet, heat oil over medium-high heat. Add half of the ribs; cook about 8 minutes until brown on all sides. Remove from skillet and add to slow cooker. Repeat with remaining ribs. Place carrots and onions over ribs in slow cooker.
  3. 3 Cover; cook on Low heat setting 8 hours or until meat and vegetables are tender. Garnish with additional thyme.
