Ratatouille with Hot Pepper Tortellini

Ingredients

cup coarsely chopped onions
1
medium green bell pepper, coarsely chopped (1 cup)
2
cups coarsely chopped tomatoes (2 medium)
1/2
small eggplant, 1 medium yellow summer squash or 1 medium zucchini, cubed
1/3
cup tomato paste with Italian seasonings

tablespoons chopped fresh basil or 1/2 teaspoon dried basil leaves
1
(9-oz.) pkg. refrigerated hot pepper cheese-filled tortellini

tablespoons chopped fresh parsley

Directions

  1. 1 Spray large nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Add onions and bell pepper; cook 3 to 5 minutes or until crisp-tender, stirring occasionally.
  2. 2 Stir in tomatoes, eggplant, tomato paste and basil. Cover; cook 5 to 8 minutes or until eggplant is tender, stirring occasionally.
  3. 3 Meanwhile, cook tortellini to desired doneness as directed on package. Drain tortellini; add to tomato mixture. Cook 1 to 3 minutes or until thoroughly heated. Sprinkle with parsley.
