My family absolutely love these! Not just for appetizers, but mainly for lunch. I am making them today for my daugher, who is having friends over tonight, her request for these!

Easy and quick recipe, instead of bacon I used smoked turkey breast deli meat and layered it over everything else before I rolled them up. It was a huge success at the get together I brought them for.

This is great tasting, my Pastor is vegetarian and I brought these to a coffee hour and I was asked by several for the recipe.

I followed the recipe but it was bland and not very thick so I added 5 oz of cream cheese and another 1/4 of a cup of red onion and 1/4 of a teaspoon of cayenne pepper and let that sit over night and then made the roll-ups, this was soooo much better. Went on a picnic and made these but added ham b4 rolling up and that was great too!

I have been making this recipe for several years, without the onion (by choice) and it has become a real family favorite. It is requested for all occasions. It is quick to make and easy to assemble. I chop all the vegetables in a mini-food processor and it goes so quick. Definitely an addition to anyones recipe box.

This was quick to make ahead. I also did the recipe without the red onions, but added finely chopped red peppers for the color. Adding an olive with the toothpick gave the appetizer a festive look.
