Short on time? Doctor up a purchased cranberry bread mix with nuts and grated orange peel. To keep the loaf tender, don't overmix the batter.
The thin, colored outer peel of oranges, lemons and limes contains flavorful oils, while the white pith underneath is bitter. Be sure to remove just the colored part of the peel. To accomplish this, use the fine holes of a regular grater or invest in a citrus zester, a tool that resembles a vegetable peeler except it has a horizontal row of small holes instead of a long vertical blade. A zester removes longer strands of the peel or "zest." Another technique, although a bit more cumbersome, is to shave off the outer peel with a sharp paring knife or vegetable peeler, then use a chef's knife to chop it into shreds.
