I added 1 lb of cooked ground beef to the mix. It made enough for two meals!

This really was delicious. We loved it. I only gave it a four because it was way too many blackbeans for me. A half of a can would have been plenty. However if you are a real lover of blackbeans then it probably would be great. Also I had some sliced, grilled mexican seasoned chicken strips that I cut up and put on top of the black bean mixture, on each layer. It made the dish in my opinion fabulous. With this said I would prefer just using the chicken and skipping the black beans altogether. Would I make it again?Absolutely! But probably with the changes I suggested.
