These cookies were amazing! I made a batch for my sister''s family after she had a baby. Her husband ate almost every last one within a couple of days. I didn''t have any crystallized ginger on hand, so made them without it, but I think the ginger would only add to the flavor and texture. They were soft and chewy - just the perfect consistency. I''d definitely make them again!

I wanted something different, and when I saw this recipe, I decided this might be it. This cookie was easy to prepare and bake. It was a bit sweeter than I prefer, but it was definitely tasty.
