Ingredients

cup sugar

cup canned pumpkin*

cup skim milk

egg or 2 egg whites

cups all purpose flour

teaspoons baking powder

teaspoon ginger

teaspoon cinnamon
1/2
cup chopped peeled fresh plums

Directions

  1. 1 Heat oven to 400°F. Spray 8 or 9-inch square pan with nonstick cooking spray.
  2. 2 In large bowl, combine sugar, pumpkin, milk, oil and egg; mix well. Lightly spoon flour into measuring cup; level off. Add flour and remaining ingredients; stir just until combined. Spoon batter evenly into sprayed pan.
  3. 3 Bake at 400°F. for 15 to 20 minutes or until top is light golden brown. Cut into squares. Serve warm or cool.
