Pumpkin Plum Bread

Chopped fresh plums are the surprise ingredient that adds a lively contrast to traditional sweet pumpkin bread.

cup canned pumpkin*

cup skim milk

cups all purpose flour

teaspoon cinnamon

cup chopped peeled fresh plums
  • 1 Heat oven to 400°F. Spray 8 or 9-inch square pan with nonstick cooking spray.
  • 2 In large bowl, combine sugar, pumpkin, milk, oil and egg; mix well. Lightly spoon flour into measuring cup; level off. Add flour and remaining ingredients; stir just until combined. Spoon batter evenly into sprayed pan.
  • 3 Bake at 400°F. for 15 to 20 minutes or until top is light golden brown. Cut into squares. Serve warm or cool.
