Pulled Pork with Beer

A pale ale type beer works great and doesn't turn bitter during the long time in a slow cooker. Don't like beer? Try root beer or cola instead---delicious.

lb boneless pork shoulder

large onion, cut in half, sliced

can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce

cup pale ale beer, root beer or cola
8
sandwich buns, split

  • 1 Rub pork with 2 teaspoons salt. In 10-inch skillet, heat 1 tablespoon oil over medium-high heat. Cook pork in oil 6 to 10 minutes or until brown on all sides.
  • 2 Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place pork and drippings in slow cooker. Sprinkle with onion. Pour cooking sauce and beer over pork. Cover; cook on Low heat setting 8 to 10 hours.
  • 3 Remove pork from slow cooker; reserve 1/2 to 3/4 cup juices. Use 2 forks to pull pork into shreds; mix pork and desired amount of reserved hot juices. Spoon into buns.

This turned out great, although I didn't follow the recipe exactly. I used a semi bone in shoulder (on sale for 1.47/lb, can't resist that price!), omitted the onions and used soda (diet coke). My family LOVED it! I kind of think the bone helped retain some of the moisture, as all the meat surrounding it was the juiciest and most tender part of the whole roast. I will do it exactly that way again next time (and there WILL be a next time!)

This was so wonderfully easy & a big hit w/the family. We used pork butt and a wheat ale. The onion flavor was not too strong, just a lovely accompaniment. Next time we'll try some pepper in the initial rub. Very flexible--people can add hot sauce or bbq or cheese to their individual sandwiches if they like more zip. Based on the reviewer's tip about ginger ale, would like to try ginger beer, although maybe with a splash of wine at the end when cooked?

I have put onions in with the pork when making pulled pork when I start it cooking with the beer, it is yummy!

To make a wonderful pork chili burrito, when cooking the pork in beer about half way through the cooking time I add some salsa (however hot a salsa you like), use your favorite kind (I use On the Border Medium Salsa), after shredding it, I return it to the crock pot and sometimes add a little more salsa and a can or two rosarita refried beans, and then let it cook for a little while longer and use this filling to wrap up in tortillas, add some cheese, sour cream, lettuce and whatever else you like! It is a yummy meal!!!!!! My girlfriends all love this!!! Everyone always wants the recipe!
