I made this dish recently and added sliced mushrooms. I didn't have the pre-seasoned tomatoes so just added my own spices. It is a repeat for sure.

We went to a very dear friend's house for dinner and Scrabble on Saturday night and this is the meal she prepared. I have to say that this recipe was so good the only thing I did not do was lick the plate! I did make sure I got a copy of the recipe before we went home that night and my husband has already asked what night we will be having this for dinner.

I love this recipe! It's hard to find things that both I (West coast girl) and my husband (Southern guy) both like, but this one is a keeper! I used chicken breasts cut into chunks, diced onion instead of whole onees, and added sliced green onion on top.

I've now made this dish several times and it works great with whatever type of chicken you have on hand, thighs; Boneless/skinless Breasts and even boneless chicken tenders. The bacon and the seasoned tomatoes are a fabulous finish!

I made this for dinner tonight and my husband raved about it! Very easy to make. I cut the thighs into thirds for easier cooking and serving. Goes well with some homemade bread.
