Provençal Beef Stew

Ingredients

lb. beef stew meat

slices bacon, cut into 1-inch pieces

(18-oz.) jar brown gravy

(14 1/2-oz.) can diced tomatoes, undrained

teaspoon dried thyme leaves

teaspoon salt

teaspoon pepper

(1-lb.) pkg. fresh baby carrots

new red potatoes, quartered

small onions, cut into eighths

(8-oz.) pkg. fresh whole mushrooms
  • 1 In large skillet, cook beef and bacon over medium-high heat until beef is browned. Drain.
  • 2 In 3 1/2- to 4-quart slow cooker, combine gravy, tomatoes, thyme, salt and pepper; mix well. Add browned beef, bacon and all remaining ingredients; stir gently to mix.
  • 3 Cover; cook on low setting for 8 to 10 hours or until beef and vegetables are tender.
